Just looking for something different and a bit lighter for Super Bowl Sunday dinner at our place. Dave loves lemon flavors and Eric said it has to be sweeter rather than tart. This looks like a good recipe to tweak into those requests!

Recipe: preheat oven to 350F and thoroughly spray 12 mini donut spaces

1 small lemon yogurt, Greek style

3/4 cup white sugar

1 large egg

1 tbsp lemon emulsion

2tsp lemon juice

1/4 cup coconut oil

Mix above thoroughly.

Add 1 1/3 cup unbleached wheat flour

1/2 tsp baking soda

1/2 tsp baking powder

Mix until moist. Fill the donut pan depressions about half full. Bake for 15 minutes.

Place waxed paper under cooling rack. Glaze while warm with mixture of 1 cup powdered sugar and 2-3 tbsp lemon juice. Be generous.
