
I started Phillipe (the sourdough starter) right after we went into the COVID-19 lockdown. March 15, 2020. When I went to the grocery store on Saturday (we got sent home from school on Friday 3/13) there was no bread on the shelves (nor any toilet paper!), little flour and no yeast available. I figured if the 49ers could use sourdough to cook, so could I! Making sourdough from wild yeast is pretty easy! We’ve come close to losing Phillipe a time or two, but so far have managed to keep him going.

I have also learned a lot about making bread products during the pandemic. I have loved to bake for as long as I can remember, but I feel I have matured a lot over the last year and a half. Yes, there are still grand mistakes but Phillipe and I have learned to make sourdough! One of my family’s favorites for a weekend morning, is sourdough pancakes.
Pancake recipe (for 2 or 3 people)
1 cup unbleached flour
2 tsp baking powder
1 tsp baking soda
1 tsp dried vanilla powder
2 tbsp granulated white sugar
1 cup sourdough starter
1/2 cup milk
2 large eggs
1 tbsp canola or olive oil
Mix all dry ingredients together well. Add wet ingredients and mix until smooth. Cook on a 325F griddle for about 3 minutes per side. The pancakes can get quite puffy as the sourdough enjoys its exposure to sugar! ENJOY!
