I haven’t made this in a while but it was one of the first “non sourdough loaves” sourdough recipes I made. Very tasty and very moist.
Ingredients:
Batter:
1 stick melted butter
2 large room temp eggs
1 tsp vanilla paste
200 g (1 cup) sugar
230 g sourdough starter (1 1/4 cup)
1 tsp baking powder
1 tsp baking soda
58 g milk or buttermilk at room temp
Topping:
200 g ( 1 1/2 cups) unbleached flour
50 g (1/2 cup) whole wheat flour
200 g sugar
2 tsp cinnamon
1 tsp vanilla paste
180 g (1 1/2 sticks) butter
Preheat oven to 350F. Grease a 9” x 9” square pan.
Mix the wet ingredients (except milk) in a large bowl. Make sure you scrape the bowl frequently as you want to make sure all these ingredients are mixed thoroughly. Mix the dry ingredients together and add to the wet bowl being careful not to overmix. Lastly add the milk and mix carefully. Pour into the pan and smooth it out.
Mix all topping ingredients together and sprinkle onto the top of the batter.
Bake for 45-50 minutes. Test center to make sure the batter has cooked through. Let cool for 10 minutes at least. Serve warm or cool.
Edit: I have started adding a 1/2 cup apple juice in place of the milk and add in3 tbsp of starch flour. Gives a very slight apple taste that we like!
