Ingredients:
1/2 cup whole wheat
1 1/2 cup AP white flour
1/2 cup white sugar
1/2 tsp baking soda
1 1/2 tsp baking powder
1/4 cup honey
1/2 cup coconut oil
3 eggs
3/4 cup cocoa powder
1 tsp cinnamon
3/4 cup sourdough
2 cups shredded zucchini- pressed in paper towels to wick off moisture.
2 tsp vanilla paste
1/2 cup applesauce
1 cup chocolate chips
Process:
Set oven to 350F and spray a loaf pan with an oil spray. I also line the bottom of the pan with cut-to-fit parchment paper because this is a crumbly loaf.
Mix dry ingredients in a large bowl (except chocolate chips). Set aside. Melt coconut oil for 25 seconds in the microwave and add honey to it. Mix them together well. Mix the rest of the wet ingredients in a medium sized bowl until well mixed (except zucchini and chocolate chips). Carefully mix all of these ingredients together. Finally add zucchini and chips.
Bake at 350F for 50-60 minutes until toothpick pulls out clean.
