Yes- it definitely needs some salt! And I think it is going to truly become more granola, less bar, soon. No binder so It will crumble apart. I’m wondering if an egg would help since Gabe can have them.

Ingredients: 1 cup organic rolled oats, 3/4 cup minced dates, 1/4 cup applesauce, dash of cinnamon and 2-3 heaping tbsp peanut butter.

Mix: place oats and dates into a food processor – I used my one for chopping nuts. Process until the dates are well coated in oat “flour” and most of the whole oats are cut. Mix in applesauce a little at a time. Add cinnamon (I will use a little more next time for flavor). The mush should hold together somewhat. Then I turned it out into a small bowl and mixed in the peanut butter by hand and until pretty well mixed. Then I placed it on a small baking sheet into a 350F oven for 5 minutes.

I admit it tastes a lot like peanut butter and oats, with little touches of sweetness, which I assume are the dates. I would eat these, especially in yogurt, but they are bland. Truly could use some salt!! I may try again and add in one egg to make it a bit more baked. But I don’t want it crunchy since little man does not yet have molars! I will also play with more dates and maybe some dried blueberries. Something to work on!
