This turned out moist, dense and yummy!

  • Batter ingredients:
  • 5 tsp softened butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 tsp vanilla paste
  • Zest and juice of one medium lemon
  • 1/2 tsp lemon essence
  • 1 cup fed sourdough
  • 2 cups whole wheat flour
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup buttermilk
  • 1.5 cups fresh or frozen blueberries
  • TOPPING recipe
  • 1.5 cups flour
  • 3/4 cup light brown sugar
  • 1 tsp ground cinnamon
  • 2 tsp powdered vanilla
  • 1 cup canola oil

Heat oven to 350F and carefully grease a 9×9 pan

Mix sugar and butter well. And the eggs, vanilla and lemon ingredients and mix until smooth. Combine the dry ingredients and mix well. Finally add in the milk and mix until smooth.

Mix the topping ingredients well

Spread the batter into the pan and add the berries on top. Do not mix the berries into the batter. Then spread the topping across the top. Bake for about 45 minutes. Check for doneness with a toothpick. Let cool for at least 20 minutes before serving.
